Description:
The Blauwal is a "Riserva" metodo classico. A single vineyard, a single vintage and a single grape variety. Time is a precious commodity, after 84 months of ageing on the lees, it manages to transfer the complex history of the vintage to the "Riserva". It is a Riserva extra Brut with a dosage of 3g/l. The fullness of flavour and the particular structure are maintained by the quality of the grapes from old vines and the perfect ripeness of the same. To maintain the complexity, only the same initial product is used for the dosage during disgorgement.

Chardonnay - TrentoDOC Riserva.
Production area:
Single vineyard in Pressano, age of the vines over 45 years on Pergel. SOIL: Sandstone with presence of lime and gypsum.
Vinification:
Soft pressing with 50% yield, fermentation in multi-occupied barriques, malolactic fermentation. Aged for a minimum of 84 months on the fine lees.
Food pairing:
A top class sparkling wine that can be enjoyed as an aperitif but can also be a very good accompaniment to food.
Serving temperature:
5°C sinking.

In the archives of the town of Pressano, the surname Cesconi appears for the first time in 1751. Since then the roots of our family have grown, together with the vineyards, on these hills.
Some documents attest to the purchase of the Olivar vineyard at the beginning of the nineteenth century. The Nosiola that grows there, thanks to the initiative of our great-grandfather Bernardino, reached Innsbruck transported on wagons pulled by oxen. Later on our grandfather Rinaldo, with the help of his son Paolo, began to supply several taverns in the nearby city of Trento with his wines. In the following years Paolo managed with great commitment, to increase the vineyard surface and finally, with the support of his sons Alessandro, Franco, Roberto and Lorenzo, the modern history of our winery begins.
