Description:
Ruby red colour. The freshness and integrity of the fruit gives character to this medium-bodied wine, pleasant and with the persistence of elegant hints of dried flowers. Demeter certificate.
Grape variety:
Corvina and Corvinone 85%, Rondinella 10% and Barbera 5% - Veneto Valpolicella DOC.
Production area:
Northeast of Verona, on the hill that separates Montorio from the Illasi Valley. Calcareous soil with predominantly ferruginous red clay in the Il Perlar and Palazzina vineyards, medium clayey tuff structure in Monte del Drago.
Vinification:
Maceration for 12 - 15 days at uncontrolled temperature. Regular exchange. Shelf. malolactic fermentation. Pour into large barrels (3500 l) and pour in concrete. This is followed by aging for 6 months in large oak barrels and another 6 months in cement tanks.
Food pairing:
Goes well with cream cheese, cold cuts and sausages, pasta with fish and tomatoes, roasted and grilled meat.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 5 years.
