Cuveè Tryphon 2017 - 13,5% vol. Peter Dipoli Winery
Description:
A wine of extreme elegance, with a ruby red colour and intense, clean-cut aromas, dominated by wild berries, raspberries and blackberries, then humus and musk, developing spices and sensations of incense. On the palate it is soft and silky, refreshed by a nice acidity and animated by delicate tannins, perfect in their integrity, which ensure a great evolution in the future. The finish is mineral, long, with pleasant returns of the aromatic olfactory sensations and an excellent taste balance. The style is reminiscent of a Pinot Noir from Burgundy.
Grape variety:
Pinot Noir - IGT Vigneti delle Dolomiti.
Production area:
Hillside "Bosco di Città" - Rovereto/Trentino. A single vineyard amidst a pine forest at a altitude of approx. 400 m above see level.
Vinification:
The grapes are harvested by hand, placing them in small containers. Sorting from bunch to bunch, to get only the best. Vinification takes place with spontaneous fermentation on the skins and stalks (approx. 55%) in open oak barrels for approx. 15 days without the addition of yeasts or enzymes and without concentration, respecting tradition and the grapes. After fermentation, the wine is aged in 228-litre oak barrels for 18 months in cellars dating back to the end of the 18th century.
Food Pairing:
This wine is particularly suited to game dishes and its great elegance allows it to be paired with almost any meal.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 10 years.
Bottle to:
750 ml - 75 cl - 0.75 lt.
Allergens:
Wine can contain sulphites.
Producer:
Dalzocchio Elisabetta Winery
Founded in 1979, it consists of two hectares of forest and two hectares of Pinot Noir vineyards. Surrounded by mountains, woods, oaks and coniferous trees, the vineyard is situated in a unique environment. This location, and the breeze, that constantly blows from Lake Garda, create a microclimate that is very suitable for vines and Pinot Noir in particular.
Through careful winemaking, the grapes from the Tenuta Dalzocchio vineyards are transformed into a wine that reflects the passion of their work.
