Description: Ruby red with a violet rim. Fruity nose with notes of cherry, strawberry and forest fruit, but also green chillies and black pepper. Balanced acidity , soft and elegant tannins, long and harmonious finish.
Grape variety: 87% Vernatsch, 10% Lagrein and 3% Pinot Noir - South Tyrol DOC.
Production area: St. Justina Schwarhof "Cypress" (2013), St. Justina Kohlerhof (1965), St. Justina Kohlerhof "Greal" (1967). Sandy loam and clay soils with moraine deposits.
Vinification: Fermentation and ageing in large oak barrels for 12 months. Spontaneous fermentation by natural yeasts.
Food pairing: Ideal with lamb and grilled meats, but also suitable with grilled fish, more sophisticated starters and with bacon.
Serving temperature: 14 - 16°C.
Ageing potential: more than 5 years.
