Grape variety:
Solaris. The Solaris grape variety is a fungus-resistant grape variety (PIWI = resistant to downy mildew and oidium). It develops optimally in organic viticulture. The Solaris is also one of the most important white wine varieties in the neutral wine segment.
Production area:
Eppan mountain, Putschwan and Kalterer heights. Between 500 and 700 m a.s.l. Loamy, calcareous, sometimes very barren, skeletal, deep soil with a high proportion of white dolomite rock.
Vinification:
Maceration for a few hours, then gently pressed. Spontaneous alcoholic and malolactic fermentation. Maturation in steel and neutral wooden barrels - first on the full lees, then on the fine lees. Bottled unfined and unfiltered in mid-August 2019, followed by further aging in the bottle.
Matching:
Appetizers with smoked fish, cream cheese, vegetable risotto, fish tartare and carpaccio, seafood risotto.

10 - 12°C.
