Description: This cuvèe convinces by its complexity in the nose and mouth. It has intense aromas of berries from the forest and also dried plums, all underlined by oak. Very structured in the mouth, balanced and long. It is a meditation wine for discerning amateurs. An optimal harmony between growth and production per plant. Only perfectly ripened grapes and balanced ageing are the essential parameters. Amistar is a philosophy. It is born in the vineyard and completed with pleasure in the glass.
Production area: Several vineyards in different locations between 350 and 450 metres. (3.5 hectares) Southern exposure. Clay to stony and sandy soil.
Vinification: Traditional vinification of individual grapes. The grapes are destemmed and crushed. Fermentation on the skins in stainless steel at controlled temperature. Here the Salasso is specially made to have more skin on less must. This concept together with the grapes dried in the vineyard (= which are vinified separately and added at the end) is the goal of the Amistar philosophy. After fermentation, each individual variety is first racked and pumped into stainless steel. After fermentation, all varieties are racked and pumped directly into barriques for malolactic fermentation and maturing for approx. 15 months.
Food pairing: This wine is ideal for very large meals such as beef fillet, roasts, game and with well-aged cheeses. Another interesting combination with this Amistar cuvèe is 70% cacao chocolate.
