Description: A full-bodied red wine, intense ruby colour, complex on the nose with pleasant secondary and tertiary notes, mainly hints of berries, especially blackberries, fresh and mineral, on the palate the tannin is well balanced and with excellent structure, it is warm and fresh at the same time. A wine that can remain in the cellar for several years.

Production area: The grapes for this wine grow on the gravelly alluvial soils of the Schwarzenbach in Ora. The vines were planted in 1960 and, thanks to their age, the grapes produce a structured wine with good ageing prospects. 3,000 - 5,500 plants per hectare, Pergola and Guyot. 0.9 ha with north-south orientation; 230 m above sea level; gravelly alluvial soils in Ora.
Vinification: The berries are destemmed and lightly crushed during the process. Alcoholic fermentation lasts about two weeks; during the first period, pressing of the marc is carried out twice a day. The young wine is then aged half in new and used barriques and half in large wooden barrels, where malolactic fermentation also takes place. After 12 months, the wine is racked into steel tanks and bottled after a further 6 months of ageing. After a further several months of bottle ageing, it is put on sale.
Food pairing: Excellent with roast veal, game, Speck and mature cheeses.
Serving temperature: 16 - 18°C.
Ageing potential: more than 5 years.

Producer: Carlotto Winery The Carlotto family has been working enthusiastically in viticulture for three generations. Umberto Carlotto started in 1940 as a tenant (sharecropper) in the Schlosshof estate at the ruins of Caldiff in Mazzon, where he worked the vineyards for 50 years together with his brother and later also with his son Ferruccio. In 2000 Ferruccio and his daughter Michela started their own business. Since then they have been working the grapes from their own vineyards, faithful to good traditional methods - both in the field and in the cellar - with the aim of rediscovering the characteristics of the vine and the terroir of the wine.
