Description: 
A very complex, multi-layered, fruity Pinot Noir with present, natural tannins and a surprising freshness. Mineral, long-lasting and elegant in the finish. A Pinot Noir with a strong expression for special occasions. 

Grape varierty: 
Pinot Noir - South Tyrol Alto IGT Weinberg Dolomiten. 

Production area: 
This Pinot Noir grows on the morainic soils of the glaciers from the last ice age, mixed with volcanic rocks composed of quartz porphyry very rich in minerals, mica schist and granite at a height of 500 m a.s.l. The airy hillside vineyard facing west and sun-drenched enables an optimal ripening of the grapes. 

Vinification: 
Selection of the smallest, best ripened grapes. 70% of the grapes are destemmed and, toghether with the remaining 30% of whole grapes with stems, fermented in 2000 liter French oak fermentation vat. Fermentation takes place spontaneously thanks to natural yeasts. After about three weeks of contact with the mash, with daily manual pushing down, the wine is gently pressed and clarified by natural sedimentation. Ageing takes place 75% in new oak barrels and 25% in used French oak barrels of 500 liters. After the malolactic fermentation, the wine matures on the fine lees for another 20 months. 

Food Pairing: 
A versatile food companion for special moments. Especially with roasted and grilled red meat, game and matured cheese. 

Serving temperature: 
16 °C. In order to develop its full potential, the wine needs time to breathe after opening. 

Ageing potential: 
more than 10 years.
