Description:
The deep, slightly red wine impresses in the glass with its bright ruby red. The bouquet is reminiscent of an ensemble of red fruits such as strawberry, raspberry, cherry, lingonberry and the subtle scent of blooming roses and vanilla. Juicy and easy to drink on the palate, it convinces with its fresh elegant style, the pleasantly dry tannin and a slightly mineral taste with structure and intensity.
The traditional Eppan/Appiano blend with Pinot Noir and any waiver of additives supports and strengthens the character, the uniqueness and quality of this wine. The name "Upupa" refers to the Latin name "upupa epops" for hoopoe, which underlines the naturalness and independence of this wine.

Production area:
The '' Rosslauf '' winery is located directly on the South Tyrolean Wine Road between Eppan/Appiano and Kaltern/Caldaro on a hilltop 450m above sea level. This well-exposed vineyard is planted with vines, that are over 50 years old and which produce particularly high-quality, small-berry Vernatsch grapes. In addition to the glacier moraine floors with porphyry subsoil, river gravel deposits can also be found here, which tell of the original course of the river Adige.
Vinification:
The Vernatsch grapes, selected before harvest, are ripening on the vine for as long as possible. After harvesting, the grapes are destemmed, transported via slide into a 2,000 liter fermentation vat and fermented there on the natural yeasts. After three weeks of contact with the mash, the wine is gently pressed and clarified by natural sedimentation. The further refinement is taking place in 500 liter oak barrels. After the malolactic fermentation (BSA), the wine is maturing on fine lees for another 15 months.
Food pairing:
The Upupa red goes well with lamb, white and red meats and of course with the typical specialities of South Tyrolean cuisine.
Serving temperature:
12 - 14°C. In order to develop its full potential, the wine needs time to breathe after opening.
