Description

Description: 
Intense straw yellow in the glass, with golden reflections. The nose is characterized by an olfactory bouquet with fruity notes, vegetal and varietal tones, as well as memories of candied citrus fruits, salty and mineral nuances. The palate is played on a nice balance between soft and creamy parts, fresh and savory components. It is well structured and persistent. The relatively high elevation of the slope allows for full ripening of the grapes without loss of acidity or aroma. The goal was a wine with a complex aroma of tropical fruit (without notes of unripeness) and with the acidity and structure that allows for several years of evolution in the bottle. 

Grape variety: 
Sauvignon Blanc - South Tyrol Alto Adige DOC. 

Production area: 
Terraced slopes in Penon (municipality of Cortaccia) at an altitude from 500 to 600 m a.s.l., sandy soils with a high amount of dolomitic limestone. 

Vinification: 
The must fermentation takes place in large acacia wood barrels for approximately 10 days at a controlled temperature of 22°C. No malolactic fermentation. The wine remains in the barrels on its lees until June. The wine is put on sale after approx. one year of bottle aging. 

Food Pairing: 
It is a great accompaniment to fish-based starters, grilled or steamed fish and fresh cheeses. 

Serving temperature: 
10 - 12°C. 

Ageing potential: 
more than 10 years.

Some years ago I put my lifelong passion for wine into practice by becoming a wine producer. I wanted to make wines that would reflect my ideas about which grape varieties to use, and about the most correct and respectful ways of turning them into wine. I believe that each grape variety should be planted in the environment that best suits it. The producer’s job is to transform the grapes – as naturally as they arrive from the vineyards – into wines that express the characteristics of soil, habitat and growing season these grapes are a fruit of.A respect for these factors precludes all predetermined styles of wine, too often produced following momentary fashions. I am happy when consumers understand a wine to be the result of specific growing conditions, with whatever natural variabilities these may entail. Only then they can appreciate a great wine as being a unique and true expression of a grape, its territory and its producer.
