Description:
This wine is vinified according to the old tradition as a mixed set and is therefore very diverse, complex, with numerous notes on the nose and palate. It is ideal as a versatile accompaniment to food.

Mixed set of 8 different white wine varieties - IGT

Production area:
The vineyards are located in Afing at an altitude of between 800 and 1100 metres above sea level on loamy and sandy moraine soils. The steep, south-facing vineyards are well ventilated by the alternating updraughts and downdraughts, guaranteeing very good grape quality.

Vinification:
For the mixed set, 5 varieties are harvested together and fermented in a large amphora on the skins. Three other varieties are fermented and matured classically in large wooden barrels. After standing for around two weeks, the mash is pressed in the amphora and combined with the other, classically matured varieties. They mature together in large wooden barrels on fine lees and are bottled after one year.

Goes very well with traditional South Tyrolean cuisine

After graduating, my wife Alberta and I bought a very beautiful but somewhat run-down mountain farm, which inspired us both straight away: at an altitude of 1,000 metres, with alpine pastures between 1,400 and 1,800 metres above sea level, with its own forest.
The farm was first mentioned in the mid-13th century. Later, it was known as Widum Baumannhof, which means "creator for the parish priest or provider of land belonging to the church", and its large baking oven was particularly popular.
Our aim was to make the farm viable and self-sufficient through sustainable mountain farming - especially from an energy point of view. But it was also a pilot project with which we wanted to encourage and motivate others to do something similar, because mountain farming is the basis of the beauty and uniqueness of our country.
