Description:
The Sauvignon Vigna "Ofenweingarten" is characterized by secondary aromas and a very mineral bouquet. The partial aging in wooden barrels gives the typical smoky note of a mature Sauvignon Blanc. The yellow fruity and exotic fruit aromas are combined with light vegetal notes of nettles and elderberries. The wine is full-bodied and savory with good acidity and a long finish.
Grape variety:
Sauvignon - South Tyrol DOC
The grapes come from one of our oldest vineyards, which has been known for excellent grape quality since the 16th century.
Production area:
The grapes grow at 450 meters above sea level, on steep slopes facing south-east. The natural and layered clay soil and the Mediterranean climate give this wine its unmistakable notes.
Vinification:
The winemaking begins with the careful care of the vine. Important is the right choice of harvest time. Subsequently, the wines are fermented in stainless steel containers at a controlled temperature. Depending on the variety, the wines mature in large oak barrels or are matured in French oak barrels. This unfolds an unmistakable fine taste, which remains long and clean on the palate. The Haidenhof wines are in style rather fruity and full-bodied.
Food pairing:
Exciting as an accompaniment to oysters, salmon tartar or shellfish, to risotto, roasted brook trout fillet, steamed lobster or a roast lamb, asparagus dishes and aged goat cheese.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.
Bottle to:
750 ml - 75 cl - 0,75 lt.
Allergens:
Wine can contain sulphites.
Producer:
Haidenhof Winery
The Haidenhof vineyards are the result of the care of several generations of owners and cover an area of 3,5 hectares at an altitude of 450 m, with south-east exposure.
The ancient and venerable stone cellar in Haidenhof is over 300 years old and here, once upon a time, wine was sold in bulk. Since 2006, the Erb family has been selling about 15,000 bottles of wine a year. The quality of the wines has increased over the years thanks to the improved quality guidelines. In addition, the variety has also been expanded: today the family business produces eight different labels, each of them requires special storage and processing. Each wine reflects the characteristics of the grape variety, the growing medium, the weather conditions and the winemaking process.
