Description:
Upupa Rosa was created as an experiment and because the result was so pleasing, it was bottled for the first time in 2021 as an anniversary wine with a special label.
Upupa Rosa captivates with its coppery colour and delicate fruity notes reminiscent of wild strawberries and peach. The palate is structured and mineral, carried by tannin, an ideal companion for food.
Grape varierty:
50% Vernatsch and 50% Pinot Noir - Alto Adige IGT Vigneto Dolomiti.
Production area:
The grapes for this rosé wine grow in various vineyards at an altitude of around 450 m a.s.l. Glacial moraine soils with a porphyry background and fluvial gravel deposits that tell of the original course of the Adige River predominate. The vineyard from which the Schiava grapes come, Rosslauf, is well exposed, planted with 50-year-old vines that produce quality Schiava grapes.
Vinification:
Separate manual harvesting, followed by a 24-hour maceration period with the stalks. Soft pressing is followed by spontaneous fermentation using natural yeasts, in used 500-litre oak barrels. After malolactic fermentation, the wine was matured on the fine lees for 12 months.
Food Pairing:
We recommend the Upupa Rosa with fish dishes, shellfish and crustaceans, but also with light starters and fresh cheeses.
Serving temperature:
8°C. In order to develop its full potential, the wine needs time to breathe after opening.
Ageing potential:
more than 5 years.

In the east, moraine soils from the last ice age are predominant, mixed with volcanic rock made of quartz porphyry with a very high mineral content.
