Description

Description: 
Light ruby red colour with light purple hues. Clear perception of black cherry and a subtle redcurrant scent. At first glance, a slightly smoky woodiness appears on the nose, which is immediately embedded in notes of mocha and dark chocolate. The tannin is reminiscent of 70% dark chocolate on the palate, on drinking there is a filigree that fills the mouth, long lasting persistence and softness in the finish. 

Grape variety: 
95% Schiava (Vernatsch) and 5% Lagrein - Alto Adige DOC 

Production area: 
Cardano on 350m above sea level, deep sandy porphyry soil. 

Vinification: 
12 hours maceration followed by controlled fermentation on the marc for 8 to 10 days in stainless steel barrels. Malolactic fermentation with ageing in French oak barrels (second and third passage) until April. 

Food pairing: 
the wine goes very well with the classic South Tyrolean "Brettlmarende", with speck and carne salada dishes, it is also recommended with game dishes, summer first courses and hard cheeses. 

Serving temperature: 
14 - 16°C. 

Ageing potential: 
more than 5 years.

The brothers Markus and Thomas Puff are responsible for the wine production at the impressively 700 year-old Pitznerhof in Cardano at the entrance to the Valle Isarco. Their farmhouse lies at an elevation of precisely 350 meters, but the three hectares of grape growing areas are on steep slopes with deep, sandy weathered porphyry soils. “We attempt to integrate the local conditions and the microclimate into the production process in the best possible way". And in the winery, there is also the underlying principle of working with the grapes gently. Thus the overall picture comes together of production that is close to nature along the entire chain. “We try to fulfill our responsibility by stressing nature as little as possible".
