Description:
Initially, the wine appears somewhat reductive, followed by a touch of flint and a subtle minerality. With obtimal maturity, citrus and pear aromas follow. The acidity, tannin and well-integrated wood make the wine very easy to drink and delicate.

Chardonnay - South Tyrol DOC.
Production area:
Altkirch in the municipality of Salorno - Calcareous soil and 50-year-old vines on double pergola.
Vinification:
85% of the grapes are gently pressed, while 15% macerate on the skins for 3 weeks. Fermentation and BSA take place spontaneously and the wines mature for 1 year on the full lees in tonneaux, barrique and cigarillos. From November to May, the wines are stirred by hand (battonage). The wine is bottled unfined and unfiltered.

Ideal with poultry.

In his younger years, Martin Schgraffer worked for 7 years in the former Erste + Neue winery co-operative to finance his subsequent studies in viticulture in Geisenheim. After his studies, he worked at Dönnhof on the Nahe. He gained further experience in Oregon, USA, among other places, before setting up his own business as a garage winegrower in his home town of Salurn.
