Production area: Poiema comes from the deep loamy alluvial soils in the Ziresi (cherry orchards) area of Volano.
Vinification: 30% dried grapes for about 30/40 days. vinification fresh grapes and re-fermentation dried grapes. Maturation for 12 months in 700 and 500 litre barrels, cherry, chestnut and oak wood, and 12 months in the bottle. Fermentation with natural yeasts.
The vinification process is special and recalls the "governo" technique of Chianti. A part of the grapes is harvested and placed to dry, while the rest completes its maturation in the vineyard. The wine obtained from the grapes harvested when naturally ripe is re-fermented with the grapes left to dry in the fruttaio and then aged for 12 months in large, unroasted barrels, also using cherry wood.
