Ribolla Gialla 2019 - 15,5% vol. Damijan Winery Podversic

Description: 
Bright amber colour. Intense and rich bouquet with pleasant notes of aromatic herbs, propolis honey, iodine reminiscences and delicate hints of macerated and candied fruits. Elegant and deep taste, full-bodied but never heavy, endowed with deep minerality. 

The secret of its elegance does not unfold immediately on the nose, where it remains somewhat reserved, but only in the mouth, where it can release its aromas. The thick, tannic skin of the grape gives the wine a taste all of its own: from dried fruits to soft, enveloping tannins with a long, lingering mineral finish. After one sip, you feel like you are chewing the wine. When you dip into the glass and close your eyes, the sensation intensifies: you imagine yourself walking through the rows of vines in the vineyard, tasting the Ribolla Gialla grape by grape. 

Grape variety: 
Ribolla Gialla - Venezia Giulia IGT. 

Production area: 
The vineyards are located on Monte Calvario on Ponka soils (Opoka Marna/Arenaria) at an altitude of 140 to 180 metres with southern exposure. No chemicals are used in the vineyard. 

Vinification: 
Fermentation takes place together with the skins in oak barrels for at least 60 - 90 days using our own yeasts. Maturation for 36 months in 20 and 30 hectolitre barrels, then 12 months in bottle. 

Food pairing: 
Pairs well with steamed fish, white meat, pasta with sauce and fish, eggs and savoury pies, smoked fish. 

Serving temperature: 
12 - 14°C. 

Ageing potential: 
more than 10 years.

750 ml - 75 cl - 0,75 lt. 

Allergens: 
wine can contain sulphites.

In the path of the winemaker it’s important to understand the nature. People are not used anymore to listen to it, but paying attention on her colours, scents and cicles eveything became clearer. The most significant work of the winemaker is connected to the vineyards, because to make a great wine it needs: a great terroir, a great variety and a mature seed. Ponca – our soil. Composed of marl and sandstone is vocated for the fructiculture thanks to her property of withholing water in dry periods and gifting the wine with her minerality. 
The variety – is related to the parallels. This territory is the kingdom of Ribolla Gialla, Malvasia Istriana and Friulano.
