Uvaggio: Kerner - Alto Adige Valle Isarco DOC.
Zona: Novacella nella Valle Isarco. Altitudine tra 600 - 900m s.l.m. Microclima caldo con alti sbalzi di temperatura tra il giorno e la notte. Depositi morenici permeabili, composti da micascisto, paragneis e quarzite.
Vinificazione: Fermentazione lenta a temperatura controllata in cisterne d’acciaio inox. Affinamento per ca. 6 mesi sui lieviti fini in fusti d’acciaio e grandi botti di legno.
Abbinamento: Aperitivo, antipasti leggeri, pesce alla griglia, terrina di verdure, speck.
Temperatura di Servizio: 10 - 12°C.
Invecchiamento possibile: oltre 5 anni.

Produttore: Tenuta Pacherhof Il Pacherhof è una cantina vinicola a Novacella, che sorge su un soleggiato pendio sopra Bressanone. La cantina si trova nella Valle Isarco, presso la città vescovile: le sue origini risalgono al 1142 ed è da sempre proprietà della famiglia. Il viticoltore Andreas Huber coltiva su otto ettari altrettante varietà di viti a bacca bianca, che torchia nella cantina privata e commercializza in prima persona. I suoi vini sono secchi e caratterizzati da una spiccata mineralità e intense note fruttate, racchiudendo in sé le caratteristiche della vite e del terreno, all’insegna della purezza. Per questo motivo, Andreas Huber punta su una lavorazione delicata delle uve in cantina, rinunciando consapevolmente alla maturazione in barrique.
