Descrizione:
Mineralità e finezza caratterizzano questo straordinario vino bianco proveniente dalla località Schalenstein di Kurtatsch, a 550 metri di altitudine. Questo Sauvignon non è una bomba di frutta come molti Sauvignon di grandi produttori. In termini di stile, ricorda un Puligny Montrachet, con una lunghezza molto piacevole al palato.

Zona:
La posizione migliore Schalenstein si trova nel villaggio di Cortaccia, nel sud dell'Alto Adige. La struttura ha più di 35 anni e si trova ad un'altitudine di 550 metri
Vinificazione:
Fermentazione spontanea in botti di rovere tonneaux. Affinamento sui lieviti per 8-9 mesi in tonneaux.
Abbinamento:
Confit di lucioperca con purea di radice di prezzemolo e fregola sarda; Poussin con limone, dragoncello e ortaggi a radice arrostiti
Temperatura di servizio:
8 - 12°C.
Invecchiamento possibile:
oltre 5 anni.

Luis deve il suo entusiasmo per la viticoltura al suo padrino Heinrich. In giovane età, gli fu permesso di aiutarlo nei lavori nei vigneti a Santa Maddalena (Bolzano) e di fare così le sue prime esperienze nella viticoltura e nella produzione del vino. All'età di 13 anni, Luis ha fatto il suo primo vino sotto la guida del suo padrino. Nasce la passione per l'uva e accompagnarla fino a farla diventare vino ed è chiaro quale direzione avrebbe preso la sua formazione.
