Description

Description: 
Colour: Straw yellow with a light green luster. Nose: Fruity aroma of ripe fruit and notes of smoky vanilla. Taste: Strong, mineral, unforgettable. Excellent balance, well-integrated acidity and excellent aging potential. 

Grape variety: 
Chardonnay - South Tyrol DOC 

Production area: 
Premium selected vineyards in the municipality of Eppan (450 - 550 m). Exposure: Southeast, southwest. Soil: Sandy limestone gravel (or calcareous gravel soils). 

Vinification: 
Fermentation, malolactic fermentation and development on the lees in barrique-tonneaux. Assemblage takes place after almost a year, followed by six months of further maturation in steel tanks. 

Food pairing: 
Pairs well with hearty dishes like fritto misto (fried seafood), porcini-mushroom ravioli with cream sauce and risotto with Graukäse cheese and chili. It also goes well with roasted chicken and Wiener Schnitzel. 

Serving temperature: 
8 - 10°C. 

Ageing potential: 
more than 8 years.

But for well-structures red wines, outstanding small vineyards are found at lower elevations and along the Wine Route. The mild and sunny climate forms the basis for the unique quality of the wines.
