Description:
The oldest Pinot Blanc vines form the basis for this prestigious wine. The name Himmelsleiter (ladder to heaven) corresponds to the beauty of this site with a view all the way to the mountains above Merano. The wine is characterised by a fresh and varied bouquet of apple, pear and a hint of green lemon. The palate reveals a mineral and persistent taste.

Production area:
The grapes grow in the highest part of the "Reitel", "Plattacker" and "Himmelsleiter" vineyards at about 750-850 metres above sea level. The cooler nights in this area ensure that refined aromas are formed in the ripe grapes and that the acidity is preserved.
Vinification:
In the cellar, we let the destemmed grape must rest for a few hours before pressing, depending on the vintage, to preserve minerals, natural aromas and tannins. After pressing, we let the slow must ferment at a controlled temperature in acacia barrels. We let the young wine rest on its lees until shortly before bottling.
Food pairing:
We recommend it with asparagus, and generally with strong-flavoured starters, white meat and fish dishes. Particularly enjoyable after two or three years of storage.

An estate winery also lives from strong personalities. The Castel Juval Unterortl Estate Winery in Castelbello at the entrance to the Val Senales has three at the same time: the king of mountain climbing, Reinhold Messner, is the owner, and Gisela and Martin Aurich run it as tenants. Three heads for one estate winery, so to speak. While Reinhold Messner most likely needs no further introduction, in the context of his estate winery it is worthwhile to take a closer look at the Aurichs. They have dedicated themselves to wine and distilled spirits since 1992. In the Castel Juval Unterortl Estate Winery, they are responsible for 30,000 bottles that are produced here year after year: Müller Thurgau, Riesling, Pinot Blanc, and Pinot Noir, whose very particular character is passionately looked after by the Aurichs. As their credo goes, in the end it should be possible to taste the characteristics of the grape variety, the soil, and the microclimate.
