Grape variety:
Sauvignon Blanc - South Tyrol IGT - Mitterberg Alto Adige.
Production area:
Bolzano / Karneid with 45% slope - sweaty affair - vine age over 4 years.
Vinification:
After whole bunch pressing, spontaneous fermentation takes place. The wine matures for 18 months in tonneaux on the full lees and is then bottled unfiltered.
Food recommendations:
Vegetable and fish stew dishes
Serving temperature:
8 - 10°C.
Ageing potential:
more than 8 years.

HochKlaus is a winery in South Tyrol, offering wines that are anything but typically South Tyrolean. Indeed, Klaus, the South Tyrolean winemaker, has gained his experience abroad.
There's one thing the winery, the winemaker, and the wines have in common, though: they want to be as authentic as possible - rather down-to-earth self-support than posh glamour.
High up above Bolzano, in Cornedo, you can find Klaus and his winery HochKlaus. Not a picture-perfect winery, but an honest one. Wine & winemaker.
The winery is an ensemble of atmosphere, plants, animals and humans. An open drawing represents that on the label. The logo puts everything together in a circle (as a world).
