Production area:
Novacella - Bressanone valley basin at 650 to 750m a.s.l. Permeable moraine deposits composed of mica schist, para gneiss an quartzite. Aspect south, south - west.
Vinification:
60% of the must ferments and ages in stainless steel tanks, 30% in 30 hl acacia casks. The remaining 10% ferments and ages in French barriques.
Food pairing:
Excellent as an aperitif. It accompanies delicate appetizers, first courses, fish and white meats, bacon and asparagus.
Serving temperature:
10 - 12°C.

more than 5 years.

Abbazia di Novacella Winery
Wine estate since 1142, the Abbazia di Novacella winery is among the oldest active wineries in the world. As early as in 1177, Pope Alexander III. confirmed the Monastery’s ownership of vineyards in the vicinity. To this very day, the Abbey is surrounded by terraced vineyards. They extend from the monastic complex, which is located at an altitude of 600 m (2,000 ft.), up the steep hills to an elevation of 900 m (2,950 ft.). The grapes are turned into wines with a strong character in the Abbazia winery.
Both, the white varieties in Novacella (70%) as well as the red ones in Cornaiano and Bolzano (30%), are cultivated according to clear rules and harvested at peak maturity. At the winery, they use the greatest care to preserve each variety’s character that reflects its terroir in order to produce wines that are the most typical, full of character, and capable of developing with age.
