Description: 
In the color ruby ​​red with brick-colored reflections. Spicy on the nose with notes of cherries, violets and pomegranate. The tannins are fused deep in the body and give this wine an extraordinary structure. A wine with balsamic nuances, juicy, harmonious and very easy to drink. 

Grape varierty: 
100% Sangiovese Brunello di Montalcino DOCG 

Production area: 
A completely unspoilt landscape with galestro, clay and albarese soils, from which fossils and shells emerge, evidence of an ancient coastal seabed. The wines produced here are fresh and fruity, incredibly fragrant, moderately alcoholic and of unequalled refinement, with a salty note and a dynamic, vivacious character. 

Vinification: 
Fermentation takes place in stainless steel tanks with a brief initial cold maceration of the must for around 15 to 20 hours, followed by vinification at a controlled temperature, which can last up to 20 days. After approx. 20 days, the wine will naturally clear through sedimentation of the skins. The natural malolactic fermentation takes place afterwards. The wine is aged in oak barrels for around 24 months and, after bottling, a further 24 months in the cool cellars of Castello Romitorio before it is marketed. 

Food Pairing: 
Excellent with main courses such as beef, lamb, game, poultry and aged cheese. 

Serving temperature: 
16 -18°C. 

Ageing potential: 
over 15 years.
