Description: 
Colour: Ruby-red. Nose: Fruity aroma reminiscent of cherry, violets and red fruits. Taste: Full-bodied, supple and elegant, with subtle notes of bitter almond. 

Grape variety: 
Schiava (Vernatsch) - South Tyrol DOC 

Production area: 
Pagis Vineyard in Eppan, between St. Michael and St. Pauls (400 - 450 m). Exposure: Southeast. Soil: Limestone grave. 

Vinification: 
Fermentation in stainless steel tanks. Malolactic fermentation in large oak barrels (70 - 100 hl), in which the wine is aged for a minimum of five to six months. 

Food pairing: 
Pagis pairs nicely with starters and South Tyrolean dishes such as Roggentaschen ravioli with smoked meat. It is also a consummate accompaniment to Speck ham, sausages, mild cheeses and bread. Well chilled, it also goes well with fish. 

Serving temperature: 
12 to 14°C degrees (chilled: 8 to 10°C degrees). 

Ageing potential: 
more than 5 years.

In particular, the vineyards in and around Appiano offer the ideal conditions for varieties such as Pinot Blanc, Pinot Grigio, Chardonnay, Sauvignon Blanc, Gewürztraminer, Yellow Muscat, and Pinot Noir. 
But for well-structures red wines, outstanding small vineyards are found at lower elevations and along the Wine Route. The mild and sunny climate forms the basis for the unique quality of the wines.
