Description: The wine shows a strong body and the full aroma of ripe wild berries, sweet cherry and liquorice. It captivates with real Burgundy typicality. Its fine acidity will carry it on for many years to come.
Grape variety: Pinot Noir - South Tyrol DOC
Production area: Vinschgau has the ideal climate for this delicate grape variety! Dry and warm with a refreshing cool down during the night. The Pinot Noir vineyards ''Grafenau'' and ''Stockacker'' are located on the south-western slope of the Sonnenberg at an altitude of 650 m - 700 m.
Vinification: Careful tending in the vineyard, lowest yields from French clones and late harvesting characterise this powerful and expressive Pinot Noir. The carefully hand-picked harvest quantity was 30hl per hectare. After harvesting, the wine was first cold macerated for 4 days to allow the fruit aromas to emerge more beautifully. The chilled fermentation lasted 14 days. Great importance is attached to a gentle extraction on the fine lees. In the medieval cellar, the Pinot Noir has 18 months to mature in Hungarian oak barriques.
Food pairing: This Pinot Noir goes well with game and beef fillet nature, but is also excellent with mature cheese. If you would like to end the evening with a bittersweet chocolate, you will find a delicious companion for it in the Pinot Noir as well.
Serving temperature: 16-18°C, in inverno anche 20°C Si consiglia di aprire il vino almeno un'ora prima di berlo, oppure di decantarlo in una caraffa. Anche i sigari festivi apprezzeranno questo Pinot Nero.
Ageing potential: more than 5 years.
Bottle size: 750 ml - 75 cl - 0,75 lt.
Allergens: wine can contain sulphites.
Producer: Stachlburg Winery The altitude of 650m demands special grape varieties, which, particularly on the Partschinser soil on the sunny south-facing hillside, produce exceptionally intense wines. With great care, all wines are aged and rested in our cellar in steel tanks or in barrels. The wines are generally characterized by a particular fruitiness, an elegant acidity and a delicate structure. At times, also the fortunate exposition to the sun position and the careful thinning can produce fairly full-bodied wines. Other locations are found in the low-lying village of Andrian where with an altitude of only 300m, there is a privileged climate for rich and mineral wines.
