Description: 
The ruby red Pinot Noir is fruity and delicate. Its cherry notes are finely balanced with the aroma of red berries and pomegranate. Its berry tones merge with the delicate scent of violets. A very elegant wine, with pronounced structure and great tension, as also a full-bodied, lasting palate.

Production area: 
This Pinot Noir thrives directly below the winery at an altitude of 520 m a.s.l. and is the counterpart to the strong Baccara Merlot-Cabernet Franc. The rows of vines on the hillside, facing west, receive good sun exposure. After the sun goes down in the evening, the grapes are cooled by the descending winds. Through these great differences in temperature between day and night  the Pinot Noir Amantus receives a fresh and juicy fruit and does not seem heavy at any moment. 

Vinification: 
After the cold maceration lasting several days, begins the mash fermentation for approximately 10 days. Subsequently, after another week the young wine is drawn off and clarified for two days. It follows the fermentation in 500 lt. and 225 lt. wooden barrels, where the wine also carries out the malolactic fermentation. After 10 months of ageing in wooden barrels, the wine is prepared for bottling. 

Food pairing: 
Excellent with dishes rich in finesse that bring out the wine's filigree, wild fowl, duck breast or with various dark meat dishes. 

Serving temperature: 
16 - 18°C. 

Ageing potential: 
more than 8 years.

750 ml - 75 cl - 0,75 lt.

The vineyards of the Eichenstein Estate Winery lie in Montefranco above Merano at an elevation of 550 to 600 meters. “The interplay between microclimate, terrain, geology, and soil composition is extraordinary at Eichenstein,” Waldner explains. In concrete terms, that means that the estate winery’s grapevines grow on porphyry-quartzite and granite soils, in a Mediterranean climate, and on an Alpine landscape.
