Description: Dark ruby red in the glass. Hints reminiscent of dark berries and delicate toasted aromas. On the palate it is intense with concentrated fruit, beautiful tannic structure and with a pleasant and long finish.
Grape variety: Merlot - French clones - South Tyrol DOC.
Production area: Feigenhof at 450 m a.s.l. facing south, near the Kalterersee, with deep, sandy loam soil. On guyot and wire frame training.
Vinification: The grapes for this Merlot are harvested very late, towards the end of October. Part of the harvest (approx. 10%) is placed in crates and left to dry in the air. Fermentation is spontaneous in open wooden vats, while the malolactic fermentation takes place in barrique. Aging for 18 months in barriques, of which 60% new barrels and 40% two or three years old.
Food pairing: Ideal with grilled and roasted red meat, game and aged hard cheese.
Serving temperature: 16 - 18°C.
Ageing potential: mote than 8 years.
