Description: Intense ruby red colour with violet nuances; the aroma is reminiscent of small fruits growing in the undergrowth and spices. In the mouth it unfolds soft and round, with a persistent aftertaste.
Grape variety: Cabernet Sauvignon - Veneto IGT red
Production area: Valley of Marcellise, located at the foot of the hills at 100 m .a.s.l.. The vineyards grow on gently sloping hillsides in a north-south direction. Soil composition: Calcareous soil with some clay and stones; organic fertiliser is applied every four years with the addition of microelements as needed. In 1989, the vineyard was planted with Veronese arbours.
Vinification: The grapes are harvested exclusively by hand during the second and third weeks of September and the first ten days of October. Part of the grapes is collected in crates and then stored on plateaus in well-ventilated rooms to obtain a drying time of about 40 days. The second part of the grapes is harvested in the first ten days of October at the overripe stage and then pressed. After fermentation, the wines obtained are aged in 350-litre Slavonian oak barrels. The two vinifications are aged separately for about 30 months, then blended and bottled.
Food pairing: Good with red meat (tartare), game, spicy and mature cheeses.
Serving temperature: 16 - 18°C.

Producer: Marion Winery The Marion winery is located in the middle of the unspoilt Marcellise Valley, east of Verona. The corporate philosophy of the winery includes the balance between nature and people. The vineyards - mostly raised in the Guyot system - are home to the classic Valpolicella grape varieties, including Rondinella, Corvina and Croatina. In recent years, however, Cabernet Sauvignon and Teroldego have also been planted.
