Teroldego Rotaliano Sangue di Drago 2022 - 13,5% vol. Donati Marco

Description: 
Intense, black, rich, almost impenetrable colour. On the nose, the hints of wild berries (raspberry, strawberry, blueberry) typical of young Teroldego, give way to a more evolved perfume of blackberry and dried fruit, immersed in a sweet spicy persuasion. On the palate plum tones, dark chocolate, sharp fruit, pulpy structure with ripe, soft, sweet tannins. It is warm and soft, very balanced with a great structure. The hint of wood is discreet and never overpowers the fruit of the Teroldego.

Production area: 
The selection of Teroldego "Sangue di Drago" is obtained exclusively from the historic vineyard of Maso Donati, located in the heart of the Rotaliana area. The old vines that make it up, still planted by grandfather Marco, produce a rich and well-balanced grape that is the fruit of different subjects, called clones, a classic example of biodiversity and therefore a more complete product. In fact, Teroldego has always been the object of special attention by the Donati family, who for five generations have cultivated it on the same farm and selected the best quality strains. 

Vinification: 
The low yields of grapes per hectare, obtained by systematically thinning out the bunches, give more resitent and richer skin and pulp, allowing excellent phenolic ripening. Traditional maceration on the skins is accompanied by frequent, methodical soft punch-downs. Temperature-controlled fermentation takes place in special steel vats. This is followed by ageing in French oak barriques for a minimum of 16 /18 months. Resting in bottle before release in September. 

Food pairing: 
Recommended with strong red meat and roast dishes, game and venison, red meat with sauces, hard cheeses. Exceptional on its own as a meditation wine.

16 - 18°C.

more than 10 years.
