Description: 
This Cabernet Raut presents itself with an intense and well balanced fruit. His powerful flavor remembers at Cassis, dark berry´s and plain chocolate.

Vinification: 
A real Raut will be produceced only in the best years, under a extremly reduced yield and an unco promising dedication from the winegrower. This Cabernet ferments three to four weeks on the skins in stainless steel tanks and matures for 42 months in small oak barrels. Only after a further aging in the bottle a real Raut leaves the winery.

The Waldthaler winery in Auer, which is located in the heart of the Lagrein and Blauburgunder region in the South Tyrolean lowlands, is based on the seventh generation of winemakers. Auer is a traditional wine village in the South Tyrolean lowlands. It lies on a cone made of porphyry rubble, which gives the wines grown here a mineral note. In addition, the climate and the slight slope provide conditions that are ideal for viticulture. The Waldthalers recognized this as early as 1735. At that time, the family acquired the winery that today bears their name and comprises seven hectares of vineyards. In the vineyards of the Clemens Waldthaler winery in Auer, not only the two classic varieties for the lowlands, Pinot Noir and Lagrein, but also Cabernet and Merlot grow. In addition to the red wines, there is also a range of white wines on offer, consisting of Sauvignon, Pinot Grigio and Pinot Blanc. 
Since 1983, the highest quality wines from the Auer sites have been bottled under the registered trademark RAUT. These wines are made from selected grapes of the Merlot, Lagrein and Cabernet varieties and matured with the greatest care using traditional methods. 
The excellence of the products is guaranteed by the particular care dedicated to the vines and to the work in the cellar, following a philosophy inspired by the quality that the Waldthalers have been handed down from father to son.
