Description: 
Colour: Golden yellow. Nose: Fruity aroma of apricots and ripe exotic fruit, honey. Taste: Opulent, balanced, concentrated. Passito is the Italian term for wines made from grapes that have been dried in the open air and sunshine, and become almost raisin-like. The elegant Passito Comtess is delightful: it has intense fruit, soft and creamy body, and a long finish that lingers on the palate with racy, fresh acidity. The youthful, fresh flavors become increasingly complex with the right bottle aging, gradually evolving into muted notes of honey. 

Grape variety: 
90% Gewuerztraminer, 5% Riesling and 5% Sauvignon - South Tyrol DOC 

Production area: 
Vineyards at the foot of Valentin Castle (600 m). Exposure: Southeast. Soil: Limestone gravel. 

Vinification: 
The grapes harvest to mid December. The dried grapes are pressed, fermented partly in stainless-steel tanks and partly in small wood, and then aged. 

Food pairing: 
This fruity dessert wine goes well with blue cheese as well as with fruit-based desserts like apple strudel, Apfelkücherl fritters with vanilla ice cream and Peach Melba. 

Serving temperature: 
8 - 10°C. 

Ageing potential: 
8 - 10 years or more. 

Residual sugar: 
approx. 250 gr./lt.

The unique terroir, the respectful dealing with the grapes, and careful processing guarantee unique wines filled with character. In particular, the vineyards in and around Appiano offer the ideal conditions for varieties such as Pinot Blanc, Pinot Grigio, Chardonnay, Sauvignon Blanc, Gewürztraminer, Yellow Muscat, and Pinot Noir. 
But for well-structures red wines, outstanding small vineyards are found at lower elevations and along the Wine Route. The mild and sunny climate forms the basis for the unique quality of the wines.
