Description: Vibrant ruby red. Fruity bouquet: blueberry, raspberry, cherry and redcurrant with notes of mint and liquorice. Full and flattering on the palate. The velvety tannins and balanced acidity are in perfect harmony.

Production area: St. Justina Schwarhof "Cypress" (1990), St. Justina Kohlerhof "Brown" (2000) on clay and loam soils with mortar deposits.
Vinification: Cold maceration for 9 days, followed by 8 days of spontaneous fermentation with pied de cuve at a controlled temperature of max. 26°C. Fermentation tanks with automatic immersion. Ageing for 18 months in barriques, 1/3 in new wood.
Food pairing: Pairs very well with game dishes, piquant cheeses, strong pasta and full creamy risottos.
Serving temperature: 16 - 18°C.
Ageing potential: more than 5 years.
