Description:
From a single old vineyard on a steep slope, an exclusive manual labour with passion of more than six hundred hours necessary to obtain the Glera grapes, this Brut Nature is born. Spontaneously fermented in the bottle, without disgorging. Intense straw-yellow colour, with notes of flowers and acacia honey on the nose. Characterful and dry on the palate.

Vineyards Cal del Merlo at 300 m a.s.l. on limestone conglomerate and sandstone soil
Vinification:
Hand-harvested between mid and end of September. Soft pressing of the whole grapes. Fermentation in steel tanks at controlled temperature. Spontaneous bottle fermentation without disgorging, malolactic fermentation possible. Maturation period 6 - 8 months after bottling, then continuous development.
Food Pairing:
As an aperitif, with starters and generally with any dish. It is recommended to put it in a container with ice before tasting.

Ours is a small company with a well-founded winemaking tradition. Romolo, the company's founder, has always worked the family vineyards with extreme passion and meticulousness, and it was in the 1950s that he decided to undertake the art of bottling his own wine, which until then had been sold exclusively to renowned sparkling wine companies.
