Amistar Cabernet Franc 2021 - 13,5% vol. Peter Sölva & Fils Winery

Description: 
It is a unique speciality of vinifying and bottling Cabernet Franc in purity. This so-called brother of the great Cabernet Sauvignon is a red wine underlined by its elegance and finesse on the palate. It convinces by its red berry fruit and its persistence and harmony in the mouth. 

Grape varierty: 
Cabernet Franc - Alto Adige DOC 
Approx. 5% grapes dried in the vineyard (on the vine). The vines were selected directly in France according to the characteristics of the vineyard in Laives. 

Production area: 
Vineyard in Laives in the Maso Gföll on the 350m above sea level. Vineyard is very dense with approx. 8000 plants per hectare. Soil: Clay with sand and especially porphyry. 

Vinification: 
Traditional vinification on the skins. The grapes are destemmed and crushed. Fermentation on the skins in stainless steel at a controlled temperature. Here the "Salasso" is specially made to have more skin on less must. This concept together with the grapes dried in the vineyard (=which are vinified separately and added at the end) is the goal of the Amistar philosophy.After fermentation, the wine is first racked and pumped into stainless steel, then pumped directly into barriques to make Malolactic and to mature for approx. 15 months.  An optimal harmony between growth and production per plant. Only perfectly ripened grapes and balanced ageing are the essential parameters. Amistar is a philosophy that is born in the vineyard and completed with pleasure in the glass. 

Food pairing: 
This wine is ideal for meats of all kinds, especially interesting for lamb, game and with mature cheeses. Also interesting in combination with various cured meats.

18°C. 

Ageing potential: 
more than 15 years.

The expression of the wines comes from the two microzones Oltreadige and Bassatesina. The philosophy in the vineyard is aimed at the 3 lines I Vigneti, DeSilva and Amistar.In the DeSilva: old vines that have the aim of making only the expression of the land speak. Amistar: speaks of the expression of the family to remember the origins. A special dimension - in the fruit and in the palate they are underlined by the choice of partially dried grapes on the plant and by the selection of areas and special grapes that describe the White and Red Cuvèe.
