Description: 
In our Sauvignon you will find a beautiful interplay of fragrant nettles and elderflowers, it has a delicate minerality and a fine saltiness in the drink. 

Grape variety: 
Sauvignon blanc - South Tyrol DOC Alto Adige. 

Production area: 
These grapes come from the Eppan Berg / single vineyard site (530 metres above sea level). The vines are over 27 years old and are trained using the Guyot system. The cool winds from the Mendelkamm promote the strong day and night temperature fluctuations and have a positive effect on the vineyards. The chalky, gravelly clay soils in this vineyard give the wine its unique character and beautiful salinity. 

Vinification: 
The grapes are harvested by hand. After gentle pressing, the lees of the must are clarified by natural sedimentation. Fermentation then takes place at a controlled temperature, 70% in stainless steel tanks and 30% in barrique barrels. The two wines are aged for 8 months on the fine lees and a further 6 months in the bottle. 

Food recommendations: 
It goes well with white meat dishes, fish and asparagus. 

Serving temperature: 
10 - 12°C. 

Ageing potential: 
10 - 15 years.

750 ml - 75 cl - 0.75 lt.

In our generation-spanning business, the grape is showcased in all its facets.
Our vineyards are located in Eppan Berg and in Kaltern on gentle to steep slopes at an altitude of between 290 metres and almost 700 metres. Each vineyard and each hill has its own special features. Eppan Berg is ideal for growing Pinot Blanc, Chardonnay, Sauvignon and Gewürztraminer. In Kaltern, our Merlot, Pinot Noir and Ruländer feel very much at home. We are proud of our top locations and recognise the uniqueness of each grape. The interplay of grape varieties and sites makes our hearts beat faster and creates expressive wines.
