Description: 
Due to the special vinification method, Sauvignon Fumé presents slightly smoky 'smoky' aromas in addition to the typical aromas of the grape variety. Sauvignon Fume is characterised by smoky and yeasty aromas and presents itself on the palate as a complex, full-bodied, vibrant white wine with a long-lasting finish. 

Grape variety: 
Sauvignon - Alto Adige IGT Weinberg Dolomiten. 

Production area: 
The 'Kreit' vineyard is a single vineyard and is located in Eppan, near the Monticolo forest. The vineyard is located at 450 m above sea level, faces south-east and is well ventilated. The mineral-rich rock soils, such as quartz porphyry, granite and slate, give the wines produced here a special character. The grapes come from old South Tyrolean vines. 

Vinification: 
After a maceration period of about 24 hours, the must is carefully pressed. This is followed by fermentation in 500-litre oak barrels with natural yeasts. About 20 % of the total quantity ferments on the skins for about 4 weeks. After malolactic fermentation, the wine is matured on the full lees for 16 months. 

Food pairing:
Light meat and fish dishes are recommended with Sauvignon Fume. 
To develop its full potential, the wine needs to be aerated. Ideal when drunk from a Burgundy glass. 

Serving temperature:

more than 8 years.
