Sauvignon "Asparagus" 2023 - 13% vol. Terlano Winery

Smell: delicate and complex in the bouquet, reminiscent of young, fresh tomato leaves and tropical fruits. 
Taste: pleasantly full-bodied with a balanced, fresh acid structure and a persistent finish.

Production area: 
The vineyards lie between 250 and 900 meters on a striking red colored porphyry base. It is a volcanic rock with large mineral fragments, geologically called quartz porphyry. This terroir produces very salty wines with great tension on the palate and exceptional longevity. The orientation of the vineyards to the south ensures strong sunlight. In almost Mediterranean conditions, a wide range of grape varieties thrive here, and in Terlano you can find many Mediterranean plants such as olives, pomegranates, cypresses and almond trees. During the ripening period, warm days and cool nights guarantee a high content of sugar and aromatic substances as well as the characteristic alpine freshness. 
Due to the special climatic and geological conditions, the Terlan area has its own designation of origin with the addition of "Terlaner" in addition to the geographical designation of origin "Südtirol DOC". The grape varieties that grow in the classic Terlan area between Andrian, Nals and Terlan are called “Terlan classic”. 

Vinification: 
Harvest and grape selection by hand; gentle pressing and clarification of the must from the sediment; slow fermentation at a controlled temperature in stainless steel tanks; Storage and maturation for 6-7 months on the fine lees in stainless steel tanks. 

Food recommendation: 
Everything to do with asparagus from the classically prepared steamed asparagus with Bozner sauce and boiled ham to an asparagus cream soup and a hearty asparagus risotto.

Terlano’s tradition as a wine terroir dates back over 2000 years. That vines thrive so well in the lee of Monzoccolo is due to the mild, almost Mediterranean climate with hot sunny days and cool nights during the ripening time. The striking red, easily warmed porphyry soil of Terlano also contributes to the high quality of the grapes. In the heart of this South Tyrolean wine region the Terlano winery was established in 1893. Today the co-operative has over 200 members and a total area of 240 hectares. 70% of the vineyard acreage is planted with white grapes. In modern cellars the fruits of this careful, natural cultivation are turned into wine with that perfect touch and the necessary controls.Because of the mineral content of the wines the region of Terlano is also frequently likened to French vine growing areas. The Terlano wine characteristics, the precise fruit, and the fine yet strong aroma lead experts to compare the wine with mature vintage Champagnes.
