Description

Description:
The wine presents a bright, green yellow with golden reflections. The nose is evocative of gooseberry peaches, pineapple and passion fruit. On the palate, it reveals a lively flavor full of finesse, minerally texture and juicy acidity, with citrus fruit in the aftertaste.
The two characters Rielsing and Sauvignon combine in the Enosi (Greek union) to form an unusual cuveé. In a balanced fight, the two tightly embraced for the upper hand. The wine impresses with its fascinatingly changeable personality and makes opening every bottle an exciting surprise.

Grape variety:
60% Riesling and 40% Sauvignon - South Tyrol / Alto Adige Mitterberg IGT

Production area:
The Höfl unterm Stein farm is located in Söll, above the village Tramin. Located at an elevation of 1.650 feet (500 m a.s.l.), the sandy-limestone soils yield firm-structured wines with superb depth yet at the same time a vivid level of acidity.

Vinification:
The Riesling was produced by pressing whole grapes and fermenting them in stainless steel vats. The grapes of the Sauvignon were macerated for twelve hours prior to pressing, then a part of the must was placed into barrels for fermentation. All of the wines were stored for six months on the yeast before beginning the assemblage in March. The wine has been in the bottle since May.

Food pairing:
To be enjoyed with fish and shellfisch, fresh cheese.

Serving temperature:
10 - 12°C.

Ageing potential:
more than 5 years.

Bottle to:
750 ml - 75 cl - 0,75 lt.

Allergens:
Wine can contain sulphites.

Producer:
Baron di Pauli Winery
It was the year 1999 when the Baron Di Pauli family decided to renew the three-hundred-year tradition of their estate and lay down the milestone for the production of special wines. In this sense, cooperation was established with the Kaltern Winery. The estate includes two farms. The Arzenhof, with its 10.5 hectares devoted to vineyards, stands on a hill right above Lake Caldaro. The production includes 3 wines: Arzio, a Bordeaux blend, Lagrein Carano and Kalterersee Kalkofen. While the second farm has 4.5 hectares of land and is located near Termeno. In the spring of 2004, the first Gewürztraminer Exilissi was put on the market. Cuvée Enosi was obtained from Riesling, Sauvignon and Pinot bianco grapes.
Strength and elegance, refinement and structure, but also character and personality. These are the main characteristics that distinguish the wines of the Baron Di Pauli estate in Caldaro. The name of the family and of the estate are closely linked to the history of the area around Lake Caldaro.

The bouquet is reminiscent of tangerines, yellow peach slices, Kaiser pears and fresh apples. In a duet with an exhilaratingly fruity appeal, the salty finish gives it a magical balance and a bewitching, persistent interplay with minerals and long berry fruit.Bottle to: 750 ml - 75 cl - 0,75 lt.
