Description:
It is a lovely limpid green with warm golden reflections. Its aroma is definite and rotund, with a fruity flavour of green olives of medium intensity, where scents of mown grass and olive leaves are accompanied by elegant vegetal notes of wild thistle, artichoke, bitter almond and lettuce. It is bold and rich in its vegetal notes of officinal herbs, with an overpowering and well-balanced bitterness and pungency. It would be ideal on porcini mushroom starters, bruschette with tomato, tuna salads, marinated octopus, bean soups, grilled swordfish, barbecued red or black meat and mature cheeses.
