Vinification:
We extract the alcohol from the base wine made from selected grapes using a gentle vacuum process. Using state-of-the-art technology, the air pressure inside the vat is reduced so that the alcohol volatilises at 25-30 °C. This ensures that the character, flavour and fine aromas of the original wine are preserved.
