Description:
Garnet red. Complex nose with aromas of plums, spices, red berries, dried roses and violets. Soft and spicy on the palate with important tannins that are well integrated into the structure of the wine. Good length and persistence on the palate with a fruity and spicy finish.
Grape variety:
Nebbiolo - Nebbiolo d'Alba DOC.
Production area:
Located on the Bricco del Drago hill in San Rocco Seno d'Elvio di Alba, it houses the customer reception, offices and the Degiacomi Museum: an interesting collection of tools for working in the field, vineyard and cellar. There are original 19th century machines for making Metodo Classico sparkling wine, used by Pietro Colla (Beppe and Tino's father) until the 1970s.
Vinification:
Hand harvest, destemming, crushing, maceration with the skins for 10 - 12 days at a maximum temperature of 28° - 30°C, complete malolactic fermentation before winter. Maturation in oak barrels for about one year.
Food pairing:
An important wine for the whole meal, it goes best with pasta with meat sauce and main courses with meat.
Serving temperature:
16 - 18°C.
Ageing potential:
more than 8 years.
