Description:
Brilliant garnet red, very intense and dense. Very enveloping and fruity aromas emerge on the nose: from morello cherries and cherries in alcohol to oriental spices, but also vegetal but not green notes that are more reminiscent of the bark of trees (a reference to the woods surrounding the Musella -vineyards). At the end there is also a hint of undergrowth and hummus. In the mouth it is mild and wide-ranging, the silkiness stands out, glides very velvety over the tongue. It is enveloping and soft, perfectly balanced with a dense and even tannin structure.
Grape variety:
Corvina and Corvinone 70%, Rondinella 20%, Oseleta 10% - Veneto Valpolicella DOCG.
Production area:
Northeast of Verona, on the hill that separates Montorio from the Illasi Valley. Calcareous soil with predominantly ferruginous red clay in the Il Perlar and Palazzina vineyards, medium clayey tuff structure in Monte del Drago.
Vinification:
The grapes selected and collected in crates are placed in a specially ventilated room to dry using the famous withering process. The grapes lose at least 35% of their original weight, concentrating on sugar, aromas and noble tannins. In January, soft pressing takes place and fermentation begins at low temperature (13-17°C); The long maceration allows the maximum extraction of the fruit. The wine rests for 24 months in French oak tonneaux and in larger barrels (700, 1500 and 3500 liters); After bottling, it ages in the bottle for at least a year before being shipped.
Food pairing:
Goes well with blue cheese, aged cheese, game, stewed or stewed meat and dark chocolate.

16 - 18°C.
