Description:
Nose of citrus and fragrant flowers. Mineral character on the palate, with a refreshing citrus edge and exotic fruit. The finish is long and persistent.
Grape variety:
Sauvignon - Veneto IGT.
Production area:
Sauvignon produced on volcanic soil, on the Monte Foscarino. Vines “domesticated” by the territory, with aromas and notes which are different from the typical varietal notes. The territory, with its characteristics, prevails on the variety and not vice versa.
Vinification:
Stainless steel vinification.
Food pairing:
Goes very well with oysters, clams and conch; omelette with asparagus. With local tradition dishes: eggs and asparagus, rabbit cooked in a baking pan with zest. With vegetables: salads with spring onion, radish, or strawberry; white and green asparagus.
Serving temperature:
10 - 12°C.
Ageing potential:
more than 5 years.
