Production area:
Valle Isarco 700 - 800 m. a.s.l., lean, skeleton-rich, shallow alluvial soils containing quartz phyllite.
Vinification:
Delicate crushing after a short period of contact with the skins, controlled temperature fermentation in stainless steel tanks, no malolactic fermentation, 7 months of lying on fine lees.
Ageing potential:
more than 8 years.
Matching:
light appetizers, cold meats, egg or mushroom dishes, poached freshwater fish and shellfish,excellent as an aperitif.
Serving temperature:
10 - 12°C.
