Production area: Novacella in Valle Isarco at 700m a.s.l. Quite warm microclimate with big variations between day and night temperatures. Sandy and loamy soil.
Vinification: Slow fermentation at a controlled temperature in stainless steel tanks, maturity on the lees in wooden barrels for 6 months.
Matching: Starters, seafood, shrimps, fish dishes, Asian dishes, veal.
Serving temperature: 10 - 12°C.
Ageing potential: more than 5 years.
