400 - 750 m. Position and soil: Gravelly, skeleton-rich alluvial soils containing diorite and quartz phyllite.
Vinification:
Delicate processing and crushing, controlled-temperature fermentation and ageing on fine lees in stainless steel tanks, no malolactic fermentation.
Ageing potential:
more than 5 years.
Matching:
soft cheeses, fish-based appetizers, white meat fricassées, poached or grilled fish.
Serving temperature:
8 - 10°C.
