Description:
Cultivar: 'Ogliarola barese', local name: 'Nostrana'. Harvesting method: 'scollatura' carried out with a mechanical arm in order to reduce the harvesting time. Within 4/6 hours of harvesting, the olives are selected, washed and crushed by means of a knife crusher; extraction takes place with a decanter, at a low temperature. Acidity: 0.1 % - 0.2 % (% mm expressed as oleic acid). The bouquet is intense and persistent with marked notes of artichoke 'heart', asparagus and green pepper, mixed with almond tones. The palate is full, soft and elegant, with some herbaceous sensations; the finish is fine and sharp, with an excellent balance between pungency and bitterness.

Its strong, full and elegant flavour makes it the ideal accompaniment for typical Mediterranean dishes, especially salads, soups and raw vegetables.
