"Testamatta" is Supertuscan produced exclusively with Sangiovese from old vines, a perfect combination of tradition and creativity that tells of the purity and elegance of this native grape variety.

Production area: 
Vineyards of Siena, Lamole, Vincigliata, Londa and Montefili 

Vinification: 
Spontaneous fermentation in open barriques. The grapes for Testamatta are selected from the best vineyards, characterised by plants over 80 years old, are located in the best Tuscan terroirs: Lamole and Montefili in the heart of Chianti Classico, respectively at about 600 and 400 metres above sea level, Vincigliata, near Florence, at an altitude of 280 metres, Londa instead north of Florence towards Rùfina and Siena in southern Tuscany at an altitude of 250 metres. Each vineyard is harvested up to eight times in order to collect all the grapes at the perfect level of ripeness. A second selection of the grapes is made in the cellar before destemming and then the soft pressing phase. Fermentation is carried out with indigenous yeasts, in open barriques (225L) without any temperature control, with six manual punching-downs per day. After 7 to 10 days of maceration, the different parcels are transferred to barriques, up to the ninth to tenth passage, for ageing for about 2 years.

Bibi is fascinated by the old vines, their finesse, elegance and the purity of the grapes they are able to produce. Today, the company has one of the largest collections of old vines in all of Tuscany.
