From the 2020 vintage Castello Romitorio produces a new Rosso di Montalcino called Colto. A Rosso di Montalcino with a vibrant, long and expressive colour, the result of young, strong vines planted in the unspoilt territory of Castello Romitorio to the north-west of Montalcino. The wine is produced in very small quantities (only 6000 bottles).

Production area:
A completely unspoilt landscape with galestro, clay and albarese soils, from which fossils and shells emerge, evidence of an ancient coastal seabed. The wines produced here are fresh and fruity, incredibly fragrant, moderately alcoholic and of unequalled refinement, with a salty note and a dynamic, vivacious character.
Vinification:
Colto is aged for six months in wood, six months in cement and six months in the bottle. This is a magnificent expression of Sangiovese that reflects the more austere climate of the north-western quadrant of the Montalcino area. With bottle ageing, this wine will develop further complexity, character and elegance.

Braised red meat, pasta with meat sauce, mushroom risotto and aged cheese.

14 - 16°C.
